On Candlemas - 2 February - one lights candles and eats "crêpes" to celebrate the farmers' return to the fields. It is traditional on this day for every person to flip a crêpe while holding a frying pan in one hand and a gold coin in the other. This will hopefully bring riches in the coming year! Crêpes are also eaten on Mardi Gras.
Recipe for 20 crêpes Ingredients: 1/2 liter of milk 3 eggs A pinch of salt 300 grams of flour 1 spoon of oil orange peel. |

Place the flour in a bowl and beat in one by one the oil, salt and eggs. Gradually pour in the milk and add the orange peel.
Allow the mixture to rest for one hour. It is now ready to be used.
Place a drop of oil in a frying pan and add a spoonful of batter. Wait it for it to turn a golden yellow, and then turn it over.
Sprinkle it with sugar or jam.
